Producers Association of Robiola di Roccaverano PDO

In the hills around Roccaverano – a small town located in Piedmont – a special cheese was born, the only one of its kind in the world. Its name is Robiola di Roccaverano PDO: it is our treasure, we produce and protect it with passion and enthusiasm!


It is a soft-ripened cheese made with 100% goat’s or goat’s and cow’s milk, handcrafted exclusively in the area around Roccaverano.


THE HEART OF ROBIOLA

Cheese making

Robiola di Roccaverano PDO is produced exclusively from raw whole goat’s milk of Roccaverano and Camosciata Alpina breeds and their crosses.

Milk coagulation

We add exclusively animal rennet after the acidification process has begun

Shaping

We gently transfer the curd into special perforated moulds

Salting

We add salt on both faces during turning or at the end of the shaping process
